The journey to creating Jiyuu Sushi began with two individuals from vastly different backgrounds but a shared love for sushi. Robbie, a seasoned professional with two decades in tech sales, had long harbored a deep appreciation for Japanese cuisine, stemming from a life-changing summer spent in Japan at the age of 16. That experience ignited a passion that lingered for years, even as his career took him through the fast-paced world of global sales.

Kevin, on the other hand, had spent years mastering the art of sushi. With a dedication to traditional techniques and an instinct for innovation, he had honed his craft in some of the finest sushi establishments. His skills behind the sushi bar were matched only by his commitment to creating unforgettable dining experiences.

When Robbie and Kevin first met, it didn’t take long for them to realize they shared the same vision: to bring high-quality, authentic sushi to Eagle, Idaho, in a way that was both elevated and approachable. Their conversations quickly turned into planning, and before they knew it, Jiyuu Sushi was born—a name that represents freedom, creativity, and the ability to craft something exceptional without constraints.

Together, they combined Robbie’s entrepreneurial spirit and business acumen with Kevin’s culinary expertise to build a restaurant that is not just about sushi, but about an experience—one that invites guests to trust the chef, embrace the unexpected, and indulge in the artistry of Japanese cuisine.
